Brand-new classic dining experience with authentic regional French cuisine at Raffles!

On the 2nd of September 2022, Raffles Hotel Le Royal organized a special event called “the Culinary Tour” at one of their restaurants called Le Phnom 1929.

The FoodBuzz team was very excited to join in and dish on not only the food and drink but also new knowledge about these regional french cuisines.

We got to try a total of 6 dishes starting from the appetizer to dessert. The origins of these dishes are from the beautiful regions of France called Brittany and Normandy. Wanna know more? Keep reading!

We got served a round of Cauchoise Salad as appetizers to begin with. The salad was very appetizing indeed with the fresh variety of veggies as well as potato and celery. The second dish that was served alongside the salad was French “Fines de Claire” oyster, traditional condiments which were fresh oysters served with special Brittany sauce.

The third dish, Deep-fried Camembert Cheese, stunned us the most for its unfamiliarity. They deep-fried the infamous Camembert Cheese until it looked like a gold nugget. It was crispy and a little savory that went so well with the plated fresh veggies. It would taste so good with a glass of some good wine.

Andouille de Vire & Pont l'evêque cheese turnover with apple and onion was the forth dish of the day. This dish was in fact the combination of two very traditional dishes from the region of Normandy. Andouille de Vire referred to the pork speciality made traditionally in Normandy which were minced together with the Pont l’Évêque, apple, onion and the special sauce and molded as filling.

The fourth dish was the Codfish “Dieppoise” style, white wine sauce, mussels and shrimps, “Pilaf” rice. The codfish was cooked in french Dieppoise style with white wine sauce, fresh mussels and shrimps. On the other hand, the rice was cooked in a special way that’s different from how we ordinarily cook it. Because Le Phnom 1929 is prized for their fresh seafood, the codfish was very fresh and tender compared to others.

Now that our main course was finished, we got to the dessert portion of the event! The chef plated the Breton Desserts “Bagad'' very beautifully and we got to try Teurgoule, Normand tart, Kouign-Amann, Far Breton and Pear douillon, all the classics straight from Normandy and Brittany. Putting our health first, Mr. Martin Becquart prepared these dishes with significantly less sugar.

Just to clarify, if you want to try all these foods at Le Phnom 1929, come now so you don’t miss your chance! The menu is changing every week and the focused region also changes every month as well!
