Tau Suan (Mung Beans Dessert) - Easy and Delicious Recipe

#Ingredients 

  • 300g of Mung beans 
  • 150g of sugar 
  • 1.3 liters water 
  • A few pandan leaves 
  • 1 You Tiao (fried dough fritters)
  • 40g of Sweet Potato flour

#How to Make 

  • Soak the Mung Beans overnight or at least an hour. 
  • Drain the Mung Beans from the overnight soaking and steam the Mung Beans with pandan leaves for 15 minutes until they are soft to touch. 
  • Combine 40g of sweet potato flour and 125g of water, stir until dissolved. 
  • Heat the pot on medium heat, add 1.3 liters of water, pandan leaves, and sugar and let it boil for 10 minutes. 
  • Add the Mung Beans and boil for another 5 minutes. 
  • Add the thickening mixture and continue to stir until the dessert slowly thickens and done. 

It is best serves with fried dough fritters.
