Son-in-law eggs Recipe - Fried Hard-Boiled Eggs in Tamarind Sauce

A simple egg recipe that is a perfect combination with steamed rice! Today, we would like to share the super delicious egg recipe with you which is called Son-in-law eggs - Fried Hard-Boiled Eggs in Tamarind Sauce.

#Ingredients

  • 6 eggs
  • vegetable oil for deep frying
  • 3 tbsp roughly chopped coriander (cilantro) leaves shallots
  • 1 long red chili (finely sliced)

#Spicy Tamarind Sauce:

  • 200g palm sugar (shaved)
  • ¼ cup water
  • 2½ tbsp fish sauce
  • 2 tbsp tamarind concentrate*
  • 1 lemongrass stalk, bruised and cut into batons
  • ½ tsp dried chili flakes 

#Instructions

1. Cook the eggs in boiling water for 5 minutes then transfer the eggs to an ice-water bath. Peel the eggs and pat dry with a paper towel (make sure to dry them completely).

2. Heat vegetable oil for frying over high heat. When the oil is hot, carefully add the eggs and cook for 3 minutes until the eggs become golden and crispy on the outside.

3. Use the remaining oil to deep fry the shallots

4. In a saucepan, put in ¼ cup of water and put in all the sauce ingredients and stir until the sauce thickens up a bit and take off heat

5. For serving, plate the fried-boiled eggs and garnish with shallots then pour the sauce over the top and top off with spring onions. And this delicious Fried Hard-Boiled Eggs in Tamarind Sauce goes really delicious with a cold glass of Pepsi.
