Son-in-law eggs Recipe - Fried Hard-Boiled Eggs in Tamarind Sauce

#Ingredients
- 6 eggs
- vegetable oil for deep frying
- 3 tbsp roughly chopped coriander (cilantro) leaves shallots
- 1 long red chili (finely sliced)
#Spicy Tamarind Sauce:
- 200g palm sugar (shaved)
- ¼ cup water
- 2½ tbsp fish sauce
- 2 tbsp tamarind concentrate*
- 1 lemongrass stalk, bruised and cut into batons
- ½ tsp dried chili flakes
#Instructions
1. Cook the eggs in boiling water for 5 minutes then transfer the eggs to an ice-water bath. Peel the eggs and pat dry with a paper towel (make sure to dry them completely).
2. Heat vegetable oil for frying over high heat. When the oil is hot, carefully add the eggs and cook for 3 minutes until the eggs become golden and crispy on the outside.
3. Use the remaining oil to deep fry the shallots
4. In a saucepan, put in ¼ cup of water and put in all the sauce ingredients and stir until the sauce thickens up a bit and take off heat
5. For serving, plate the fried-boiled eggs and garnish with shallots then pour the sauce over the top and top off with spring onions. And this delicious Fried Hard-Boiled Eggs in Tamarind Sauce goes really delicious with a cold glass of Pepsi.
