Rice Paper Salad: Easy and delicious recipe for your snacking time!

Rice paper is a very multipurpose ingredient to a lot of different types of food. It is used to wrap spring rolls and is eaten in various ways. Today, FoodBuzz will share a recipe to make Rice Paper Salad that tastes salty, sweet, a bit sour, and spicy, all at once!

#Ingredients 

  • Oil 
  • Rice papers (20 pieces cut into small pieces)
  • Boiled eggs (Cooked for 6mins and immediately put into iced water) 
  • Red onions (10 onions chopped into thin slices)
  • Groundnuts (120g)
  • Chinese Soy Sauce (3 tbsp)
  • Apple cider vinegar (3 tbsp)
  • Sugar (2 tbsp)
  • Korean pepper flakes (1 tbsp)
  • Chili paste (1 tbsp)
  • Sour mango (Half a mango, chopped into long pieces)
  • Vietnamese fried dried shrimps (50g)
  • Dried beef (50g)
  • Cut culantro 
  • Cut spring onions
  • Mints  

Recipe 

1. Put oil into hot oil and put chopped red onions in, deep-fry until golden brown then set aside
2. Fry groundnuts until fragrant
3. Prepare our sauce today by combining Chinese Soy Sauce, Apple cider vinegar, Sugar, Korean pepper flakes, Chili paste and set aside
4. Grab a big bowl and put in the cut rice papers, deep-fried red onions, fried groundnuts, sour mango, dried beef, chopped culantro, chopped spring onions, and a generous drizzle of oil 
5. Put the prepared sauce in and mix them all well together 
6. Plate it nicely and finish off with the boiled eggs for more flavor and a bunch of fresh fragrant mints!
