Red bean ice cream popsicle recipe – perfect treats to keep you cool on a hot sunny day!

Nothing beats an ice cream popsicle on a hot sunny day, especially the red bean ice cream popsicle that brings back childhood memories. With the creamy and refreshing taste, it's always a great idea to eat red bean ice cream. Also, the recipe for this ice cream is not complicated to make at all.

#Ingredients

  • 250 ml milk
  • 125 ml cream
  • 2 egg yolks
  • 25 g caster sugar
  • 100 g sweet red bean paste

#Instructions

1. In a saucepan, add milk and cream then let it simmer over low heat.

2. Turn the heat off and set it aside.

3. Add 2 egg yolks and sugar into a bowl then whisk until the mixture color becomes pale and fluffy.

4. Add the sweet red bean paste to the sugar and yolk mixture and mix well.

5. Gradually pour the warm milk mixture into the egg mixture and keep whisking until smooth.

6. Pour the mixture into a clean saucepan and place over low heat for 5 minutes, continuously stirring. Once done, leave it in the fridge to chill.

7. Then pour the chilled mixture into an ice cream maker (or pour the mixture straight into the mold if you don’t mind the segments precipitating at the bottom).

8. Run the ice cream maker for about 20 minutes, and once the mixture has become thicker, fill the mixture into a popsicle mold and freeze it overnight.
