Today, FoodBuzz would like to share a recipe to make Toasted Rice Fish Dipping Sauce to eat with steamed cockles and any other food of your choice! This sauce is salty, sweet, sour and is full of fragrance from the toasted rice. Guarantee you won’t get enough of it!

Ingredients

1. Tamarind Sauce (2 tbsp)
2. Fish Sauce (4 tbsp)
3. Lime Juice (4 tbsp)
4. Knorr (1 tbsp)
5. Sugar (3 tbsp)
6. Chili Flakes (2 tbsp)
7. Chopped Coriander (10g or one batch)
8. Chopped Red Onion (25g)
9. Toasted Rice (50g)

Recipe

  1. Mix all ingredients above well & Serve as a dipping sauce for any food you like (Best with seafood)

*Pro tip for cleaning cockles: Clean the cockles by squeezing them in cooked rice to get all the dirt sucked out by the stickiness. 

*Pro tip for cooking cockles: Bring your water to boiling point, put the cockles in and turn off the fire, let the cockles cook in there for 10 seconds and bring them out to put into a nice ice-cold bath to stop the cooking and get a more chewy texture.
