#Ingredients for Sesame Filling

  • 25 g black sesame powder
  • 15 g softened unsalted butter
  • 10 g powdered sugar

#Ingredients for Dough

  • 100 g all-purpose flour
  • ¼ tablespoon instant yeast
  • 10 g sugar
  • 1 tablespoon vegetable oil
  • 60g whole milk
  • 1 tablespoon black sesame powder
  • A small handful of black sesame seeds to decorate

#How to Make

1. Mix black sesame powder, unsalted butter, and powder sugar together and set it aside.

2. Mix all the dough ingredients together except for sesame powder and knead for 1 minute until a rough ball is formed.

3. Separate the dough into two equal parts, mix the other half of the dough with sesame powder. Knead them thoroughly and cover them with plastic wrap to rest.

4. Now cut the white dough into five equal pieces and roll it into balls.

5. Separate the sesame paste into 5 equal portions and roll into balls.

6. Roll the white dough into a 3" diameter rough circle, wrap one portion of filling in the dough and then shape it into a teardrop shape. Repeat the same for the rest of the dough.

7. Flatten the gray dough to make the wrap on the body of the white dough.

8. Moisten the white dough with a bit of water before covering it with the grey dough. Cover grey dough on the white dough, making sure to leave the head uncovered and fold the excess grey dough under. Repeat this step for the rest of the hedgehogs.

9. Use a small pair of scissors to make some small cuts on the back for the hedgehog spikes and place the hedgehog on a small piece of parchment paper to line the steamer.

10. Stick two black sesame seeds as eyes with water.

11. Place the buns in the steamer, spray each bun with some water, cover with the lid and let it rise in a warm place for about 40-50 minutes until it grows to be about 1.5 times the original size.

12. Steam under medium heat. Once the water is boiling, reduce the heat to medium-low, cook for 13 minutes and enjoy.
