Chef Luigi's Kingdom of Wonder-inspired new menu offers a unique twist to the Italian classics.

Affordable, quality fine dining is often a rare find in Phnom Penh these days, much less if it’s located in a 5-star hotel. One such food gem is Do Forni, which has been quietly charming expats and business professionals with their Italian cuisine for many years. 

Do Forni started 2023 with a new recommended Italian head chef Luigi Coccimiglio, who has been in the food industry for over 20 years. With a passion for Italian food, he is eager to share his knowledge from previous experiences in both Italy and China to Cambodian people and expats living in Cambodia. Joining for the past 3 months Chef Luigi Coccimiglio comes up with a new menu and is excited to share with us. He presents Roman dishes as well as his original creations inspired by products from the Kingdom of Wonder.

As we heard of his original creation, we are excited to get a taste of it. Not 1 but more than 40 dishes in the new menu, but luckily we get to try 8 of his original creations.We started with Burrata & Tomato Panzanella, a snack that consists of cheese, burrata, tomatoes, Panzanella, mayonnaise, and Brazilian oil.

Wagyu Beef Carpaccio

After having about 2-3 slices of bread, our second dish arrived, Wagyu Beef Carpaccio. This one excites us with its tasteful ingredients: thin Australian beef waffles accompanied by rocket salad, cheesecake, mayonnaise, mayonnaise, truffles, and cherry tomatoes.

Pan-Seared Foie Gras

Pan-Seared Foie Gras is the following course and is perfectly cooked for those who especially love to eat goose liver. It's cooked at the right temperature (you can tell since it feels soft on the tongue) and emitted a pleasant aroma while eating with the mango sauce, garlic sauce, and crispy bread.

Spaghetti Cacio E Pepe

Here comes the next dish which is our favorite, Spaghetti Cacio E Pepe, which consists of Aged Pecorino, Kampot Green Pepper, and Lemongrass that make it a perfect combination of Italian spaghetti with local Khmer herbal ingredients. 

Homemade Baccala Ravioli

The traditional flavor of Italy, prepared to please all guests, is captured in every bite of Homemade Baccala Ravioli's subtle saltiness. Italian spaghetti, blackfish core, salmon roe, and cane are cooked with lobster sauce to create such a unique taste.With the additional green beans and butter, Seared Cod Fish Risotto is prepared with a strong scent of Italian rice flavor. It is a nutritious dish with a bit of salty flavor that pairs well with grilled black ice fish. Additional ingredients in Pacific Tuna Tagliata include fresh tuna slices, grilled pumpkin seeds, and never forget about cauliflower sauce, which is a delicious pair with tuna meat.

We are about to recommend our favorite dish of all. We love it and are sure to go back and take another bite. The Slow-Cooked and Seared Octopus at Do Forni Restaurant is distinctive for its flavor and garnishing. Mashed potatoes flavored with lemon peel are fried with the octopus hands to give them a unique taste. Squid flesh is chewy but flavourful that makes you want to take a bite after another.  

Flower Pot Heaven's Box,

No matter how full we are, there is always space for dessert. We had Flower Pot Heaven's Box, a finger treat with a single bite, a chill that went straight to our hearts, and somewhat sweet and fresh.

In addition to the eight dishes and one dessert chosen directly by Luigi in his new menu, Do Forni Restaurant also offers signature dishes such as Insalata di Mare, Black Tagliatelle with Kep Crab, Sea Bass Acqua Pazza and Dipinto. di Luigi that everyone can come and try.
