Super Delicious Khmer Rice Noodle recipe: Num Banh Chok

Khmer New Year’s Day is coming, do you still figure out any savory dishes that you should make, either to impress your whole family or improve your cooking skill. Have you had some traditional classic dishes in your mind yet? Then FoodBuzz would like to share one of the well-known dish recipes yet suitable for serving many peoples as well, which is called Num Banh Chok for you today.  

#Ingredients: 

  • 1 whole mudfish
  • 1 cup kroeung paste 
  • 10 rhizomes or finger roots
  • 1 tbsp fermented mudfish (prahok)
  • 1/2 tbsp of sugar
  • 1 1/2 tbsp of fish sauce
  • 1 1/2 tbsp of salt
  • 2 tbsp of roasted peanut (optional)
  • 1 cup of Coconut Milk
  • 4 liter of water
  • 1 stalk of lemongrass
  • Khmer noodle (preference)

#Instructions 

  • Bring your large pot, pour 4 liters of water to a boil, and with a stalk of crushed lemongrass. Clean the mudfish, then place it into the boiling water. Keep the fish head because it gives the most flavoring to the broth. Let the fish simmer for another 5 - 10 minutes. 
  • When fish is cooked, take them out and de-bone it. Do not get rid of the broth. It will be used later.
  • Cut the rhizomes into thin slices, and then pound them in the mortar and pestle with kroeung, roasted peanuts, bird's eye chili pepper, and garlic. 
  • Then add the fish meat into Kroeung mixture and pound it. It isn't necessary to pound hard on fish meat since it was soft and put it into a bowl. 
  • After that add fish sauce, salt, sugar, and coconut milk into the bowl and mix it well. Let stand for at least 10 minutes to let all the flavor infuse.
  • Put 1 tablespoon of prahok into the large pot and wait for it to boil then, add the fish mixture. Let it simmer on low for at least 10 minutes, adjusting the broth to taste with salt and sugar then your Somlar Khmer is done. 
  • Bring rice noodle and place it into a plate and add whatever fresh vegetables or wild greens you prefer, and ladle some Somlar Khmer on top.
